From Buffalo Shrimp to Mediterranean, the options are endless.

Spaghetti squash started trending a few years ago as a great low carb and nutrient dense replacement for Spaghetti. However, it doesn’t just have to be JUST used as spaghetti. Try these fun and updated Spaghetti Squash recipes to spice up your diet.

Fast and Easy Tips for Cooking your Spaghetti Squash:

Microwave (~10 mins): Take your whole spagehtti squash and poke a few holes (8-15 depending on the size) all around the circumference of the Squash. Place on a plate and microwave for 5 minutes. Roll your squash to the other side (caution it WILL be HOT) and microwave for another 5 minutes. The squash should be soft around the outside when it is cooked (if it is not quite done, pop it back in for a few more minutes).

Remove and let it cool for 3-5 minutes before cutting it in half lengthwise (use oven mitts - again, it’s HOT).

Once cooled, remove the seeds and centre of the squash. Next, use a fork to “string” the squash by forking the squash away from the shell.

Oven (~50 mins): Heat oven to 400 F. Slice squash in half lengthwise and scoop out seeds. Drizzle halves with the olive oil and season with salt. Place squash cut side down on baking sheet and roast until tender, 45-50 minutes. Use a fork to scrape out “spaghetti.”

** DO NOT throw away the shells - use them to bake your squash in!

Buffalo Shrimp Spaghetti Squash:

Ingredients:
1/2 cup Plain Greek Yogurt or Sour Cream
1/4 cup Franks Red Hot Buffalo Sauce (“Buffalo” sauce works better than the “Original” hot sauce)
Shrimp (cooked, de-tailed) *even tastier if cooked with garlic
1/4 - 1/2 cup Cheddar or Marble Cheese

Combine:
1/2 cup of greek yogurt or sour cream
1/4 cup Franks Red Hot Buffalo Sauce

Mix spaghetti squash with sauce and pour back into the empty shell.
Add shrimp and sprinkle cheese on top.

Bake in the oven at 350 degrees for 5 minutes. Turn the oven to broil and cook for an additional 2-3 minutes or until the cheese is a golden brown.

Remove, and enjoy!

Mediterranean Spaghetti Squash:

Ingredients:
1/4 cup Sundried Tomatoes
1 cup Chopped Spinach
1/4 cup Artichoke Hearts (chopped)
1/4 cup Feta Cheese
1/4 cup Mozzarella Cheese
Cooked Chicken
2 tbsp Olive Oil (Plain, or Flavoured - garlic, pesto, etc)

Combine all ingredients except cheese in a bowl and mix together. Transfer back into squash and top with the cheese.

Bake in the oven at 350 degrees for 5 minutes. Turn the oven to broil and cook for an additional 2-3 minutes or until the cheese is a golden brown.

Remove, and enjoy!
